Special Issue Information

Dear Colleagues,

Oceans cover over 70% of Earth, being home to up to 90% of the organisms on the planet. According to the summary of FAO, the production of aquatic products amounted to 177.8 million tons in the year 2020. The quality and safety of aquatic products are important issues for scientists, consumers and industry as a whole.

The aim and scope of this Special Issue are to bridge the gap between research and application, bringing together authors, readers, and manufacturers in monitoring and improving the quality and safety of aquatic products.

This Special issue will focus not only on modern methods, technologies, and the deep processing of aquatic products, but also on the monitoring of their properties. Topics featured in this Special Issue include:

  • Quality assessment and maintenance;
  • Microbial food safety and antimicrobial systems/materials;
  • Food processing technology;
  • Rapid methods of quality and safety detection, including sensor technology;
  • Foodomics, involving genomics, proteomics, metabolomics and nutrigenomics;
  • Sensory monitoring;
  • Bioactive constituents;
  • Computer simulation and mathematical modeling.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
