Special Issue Information

Dear Colleagues,

Nuclear magnetic resonance (NMR) is the ultimate technique used to evaluate highly complex chemical matrices, commonly found in food sciences. NMR spectroscopy and imaging (MRI) are ubiquitous in outstanding qualitative and quantitative techniques for the assessment of food physical and chemical properties, including chemical profiles, molecular dynamics, compartmentalization, water/lipid spatial distribution, and kinetic processes, among many others. Additionally, studies on the identification and quantification of adulterants in several edible matrices, such as vegetable and animal oils, meats, milk, cheeses, wheat, fruit juices, and coffee, are crucial to food authentication. Therefore, advances in NMR and MRI analytical methods, aiming to achieve straightforward outcomes in food matrices (encompassing 1H, 13C, 15N, and 31P high-resolution liquid-state NMR techniques, 1H-HR/MAS (high-resolution magic angle spinning) NMR approaches, comprehensive multiphase (CMP) methods, DOSY, relaxometry, and imaging techniques) are welcome. Thus, this Special Issue will bring together the latest NMR results in food sciences, which are vital to how we understand the connection between physical chemical properties and food quality at a molecular level.

Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
