Dear Colleagues,

In today’s globalized world, there is a growing disconnect between food producers and consumers. The rising concern over food contamination with both well-known and novel pollutants has sparked significant apprehension among consumers, heightening their awareness of the associated risks. Consequently, the role of chemical analysis in food production has become increasingly important. The interest in food quality and safety of consumers, the food industry, governments, and supranational bodies highlights the importance of analyzing the composition and specific attributes of food products. Therefore, food chemistry plays a critical role in enabling scientists and food technologists to manage the quality and safety of their products effectively. It is important that decisions based on analytical data provide the highest assurances for consumers, but they depend on the reliability of the data. This reliability, in turn, depends on the correct execution at every stage of analysis. Therefore, not only is the analytical phase crucial for obtaining trustworthy data, but also are the phases of sampling, pretreatment, and result interpretation.

Following the success of the First Edition, the Second Edition of “Food Analysis in the 21st Century: Challenges and Possibilities” aims to continue the exploration of modern food analysis techniques and their applications. The forum is aimed to provide a platform for analytical chemists and food science and technology experts to present original research articles, reviews, and technical notes on innovative methods and analytical techniques for identifying major, minor, and trace constituents (or xenobiotics) in foods. We encourage contributions that concentrate on new food pretreatment techniques and those that utilize geometric, machine-learning or artificial intelligence-based methods to enhance analytical insights. Additionally, original research aimed at identifying and/or performing the speciation of emerging pollutants in food matrices or chemically characterizing quality and/or origin attributes of foods is highly encouraged. Conversely, studies related to the application of routine analytical methods on well-established food matrices are outside the scope of this Special Issue.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
