Special Issue Information

Dear Colleagues,

The marine environment, with its rich biodiversity, offers a wide range of unique bioactive compounds from organisms like algae, fish, and other marine life. These microorganisms not only provide essential nutrients such as carbohydrates, lipids, proteins, vitamins, and minerals for human nutrition but also contribute to maintaining overall health. They are particularly valued for their strong antioxidant properties, which help neutralize free radicals and offer protection against various diseases, including cancer, diabetes, cardiovascular, inflammatory, and neurodegenerative conditions. Recent years have seen growing interest in marine-derived antioxidants due to concerns about the adverse effects of synthetic antioxidants. However, isolating and characterizing these marine antioxidant compounds has been challenging. This Special Issue focuses on sharing advanced research on antioxidant molecules from marine organisms, emphasizing their extraction, isolation, chemical characterization, and bioactive potential in in vitro and in vivo models. It also examines the structure–bioactivity relationships and mechanisms of action of these compounds. Additionally, studies exploring the bioavailability and bioaccessibility of these marine-derived molecules are encouraged, highlighting their potential in combating various health issues.

Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
