Special Issue Information

Dear Colleagues,

We invite researchers and experts in the field of food science to submit their contributions on the topic "Animal-Source Foods: Novel Approaches in Safety and Quality". Foods of animal origin, including meat, dairy products, eggs and fish, play a crucial role in the human diet due to their high-quality proteins, essential fats and micronutrients. However, ensuring the safety and quality of these foods is an ongoing challenge that requires continuous research and innovation. With advances in food safety technologies and quality control methods, new processes are being developed to reduce the risk of contamination, extend shelf life and maintain nutritional integrity. These include innovative processing techniques, improved handling practices, novel preservation methods and the use of advanced packaging technologies. In addition, the integration of biotechnology and microbiological monitoring is proving essential in minimizing foodborne pathogens and ensuring the overall safety of animal-based products. We encourage the submission of original research articles, reviews and case studies that explore novel approaches to food safety and quality in foods of animal origin

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Agriculture is an international peer-reviewed open access semimonthly journal published by MDPI.
