Special Issue Information

Dear Colleagues,

Nowadays, companies place great emphasis on the quality and safety of agricultural products and food. Therefore, one of the necessary challenges is to ensure the high quality and safety of food at the beginning of the food chain through agricultural products of animal and plant origin. The quality is defined mainly on the basis of health, hygiene, nutritional, technological and sensorial aspects. When it comes to quality criteria, health aspects and the associated safety of agricultural products are of great importance. Improper handling of agricultural products, such as during the growing, harvesting, slaughtering, milking, processing and storage stages, reduces the safety of agricultural products and the final products from them that reach the final consumer.

This Special Issue focuses on current research on improving the microbiological quality and safety of agricultural products right from primary production. The articles in this Special Issue will focus on the latest international progress in ensuring the microbiological quality of products of plant origin (cereals, oils, fruits and vegetables) and of animal origin (eggs, meat, milk and aquatic animal products), as well as all types of manufactured products at any stage of collection, sorting, processing, transportation, storage, etc. We will also accept articles dealing with innovative procedures with a focus on increasing the microbiological quality of agricultural products, antimicrobial resistance, microbiota and its influence on the chemical composition of agricultural products, as well as GMOs in relation to the microbiota of agricultural products. Articles dealing with predictive food microbiology, microbiological risk assessment using innovative methods at the molecular level, as well as works dealing with additives that improve the microbiological quality of agricultural products and their final products, are also welcome. All types of articles, such as original research, opinion pieces and reviews, are welcome.
