Dear Colleagues,
We are pleased to invite you to submit your research to the Special Issue of the journal “Molecules”, entitled “Fruits and vegetables by-products and wastes as sustainable sources of functional ingredients”.
The consumption of fruits and vegetables, either fresh or in their processed form, has been associated with various health-promoting effects. However, fruits and vegetables’ production and processing sectors generate enormous amounts of by-products and waste that have a negative environmental impact (e.g., water and soil pollution and eutrophication) and result in significant economic losses. Till now, fruits and vegetables’ wastes are underutilized as animal feed. However, this biomass, which contains a great variety of bioactive compounds (e.g., polyphenols, flavonoids, dietary fibers, sugars, pigments, etc.) can be valorized in the frame of “circular economy”, to create products of high-added market value (e.g., functional food and natural food additives).
For this Special Issue, the submission of original interdisciplinary research articles, short communications, and reviews dealing with the valorization of fruits and vegetables’ by-products and wastes (i.e., pulp, peels, seeds, leaves, second-quality fruits, etc.) using novel extraction techniques (e.g., ultrasound- or microwave-assisted extraction, supercritical fluid extraction, etc.) and solvents (e.g., deep eutectic solvents, the aqueous solutions of cyclodextrin). Studies regarding the design of appropriate delivery systems in order to increase the stability and bioaccessibility/bioavailability of the extracted molecules are also welcome.

Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
