Special Issue Information

Dear Colleagues,

Agriculture, forestry, and the food industry are the basis for the economic balance of all societies as a source of products necessary for sustainable life and peaceful development. However, their manufacturing activities produce large amounts of waste, which leads to environmental pollution and economic losses. Recently, it was found that these wastes are not useless as they are also a rich source of bioactive compounds, such as antioxidants and vitamins. Currently, scientists are interested in searching for new sources of antioxidant compounds from biomass waste by-products from the food, wood, and agricultural industries, supported by the environmental benefits resulting from their reuse. The recovered compounds can be used as food additives, functional foods, nutra/pharmaceuticals, cosmetic products, and bio-based packaging.

As Guest Editors, we invite you to contribute to this Special Issue, where we aim to focus on the assessment of the content of antioxidants and other valuable ingredients in unusual raw materials for food production, such as waste from forestry (e.g., twigs, tree buds), beekeeping (e.g., drone homogenate), or agriculture production (e.g., fruit peels, seed husks). Moreover, it is important to find cost-competitive solutions for the recovery of biologically active compounds from these materials.

We invite researchers from various fields including chemistry, biochemistry, medicine, and nutrition to contribute original research articles and review articles focusing on innovative methods of isolating valuable ingredients, assessing the health-promoting properties of tested raw materials (e.g., content of vitamins, polyphenols, fiber, antioxidant potential), as well as exploring their potential use in the food, cosmetic, and pharmaceutical industries. Specifically, in this Special Issue, we encourage submissions related to the extraction of antioxidants from food and forestry waste. Our goal is to create a comprehensive collection of new insights and findings in this area, thereby enriching the collective knowledge base.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Antioxidants is an international peer-reviewed open access monthly journal published by MDPI.
