Special Issue Information

Dear Colleagues,

Foodborne pathogens and spoilage microorganisms are significant concerns for food safety, public health, and the global economy, and thus, these concerns are not limited to food production. Their presence, for instance, impacts the entire food supply chain, from primary production to consumption, which highlights the relevance of a farm-to-fork approach. In addition, these microorganisms not only threaten human and animal health but also compromise environmental sustainability and productive efficiency, leading to significant economic losses. Hence, these challenges unveil the importance of successful solutions aligned with the One Health framework.

The purpose of this Special Issue is to tackle the occurrence, survival mechanisms, detection, and control of foodborne pathogens and spoilage microorganisms. Additionally, original research as well as review articles that explore innovative and sustainable strategies are encouraged, including cutting-edge technologies, molecular assays, predictive microbiology, biocontrol methods, and natural antimicrobials. Emphasis is also given to studies focusing on the significance of improved agricultural methods and practices, food processing, and packing technologies in microbial control and an increase in efficiency and sustainable productivity. Hence, this issue seeks to support the development of effective solutions to guarantee safer, more sustainable, and higher-quality food systems.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
