Special Issue Information
Dear Colleagues,
The environmental and nutritional attributes of different food types vary considerably across time and space. Consequently, diets composed of different components of food types will differ in their environmental footprints and in their nutritional quality, and so, they affect human and planetary health differently. When such differences are multiplied by many millions of people, the overall effect is considerable.
This Special Issue is on the broad topic of “healthy sustainable diets”. Although we welcome papers discussing any aspect of healthy sustainable diets and eating, we particulaly encourage papers that focus on furthering the following questions:
1) What dietary patterns would contribute to fewer GHG emissions and other environmental impacts (including food and plastics waste), and are these necessarily healthier, closer to recommended healthy diets, or more affordable?
2) How do the multiple environmental, health, societal, economic, and cultural aims of sustainable healthy eating patterns and diets support or conflict with one another? How are food system power dynamics shifted in the move towards healthy sustainable diets?
Further topics of additional investigation may include the following:
- Discussion on the environmental impacts and health dimensions of current, future, or historical dietary patterns.
- Highlights and introductions to new (or underutilised) diet and environmental impact datasets (and research methods).
- Measures and methods to gauge progress of populations towards healthy sustainable diets.
- Investigation into the health and sustainability of specific meals, recipes, and cuisines.
- Examination of the impacts of the “use” phase (storage, packaging, cooking, and waste disposal) of healthy sustainable diets.
- Analysis of food cultural-heritage, consumer acceptance and other social issues that might be affected when shifting to healthy sustainable diets.
We invite papers about all of the above topics, as well as other topics of relevance to this Issue.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Sustainability is an international peer-reviewed open access semimonthly journal published by MDPI.
